- Summer through winter
- Beets have a strong earthy flavor and come in a variety of different colors (red, gold and pink and white spiraled)
- In a plastic bag in the refrigerator. They last for a few weeks and are delicious even when they are dried out
- Peel and cut the beets into chunks of any size. Spread the pieces in a single layer on a baking sheet and place in the freezer. When completely frozen, transfer the beets to a freezer safe container with 1/2-inch headspace to allow for food expansion. Frozen chunks may be added directly to stews or into the oven for roasting, or thawed before using.
