Fennel
Season:
- Fall through winter
- Fennel is sweet with hints of licorice or anise tastes.
- A fennel bulb can be wrapped in a plastic bag with holes in the refrigerator for up to one week
- Chop fronds and stalks and portion into ice cube trays. Cover with water and freeze solid. Wrap in plastic wrap.
- For bulbs: Cut into quarters and blanch in boiling water for 1 min. Then, plunge into ice water for 1 min. Pat dry and place pieces in freezer bags.
